Here’s an oldie but a goodie from the archives. It’s a guacamole with kale, plus a few different ingredients that you wouldn’t normally expect to find in guacamole (garlic, lemon juice and green onion). I’ve also updated this recipe to include fresh oregano, inspired by Kelly Wearstler’s guacamole recipe. I know it may sound a little odd, but it’s really good.
This version differs from traditional guacamole in that it’s a little less salty and acidic, and has more smoothness. This makes it an excellent dip for veggies, and a perfect addition to a rice bowl or burger (or burger bowl!). Just check your teeth after eating it. That kale can sneak in between your teeth.
Kale Guac
1 avocado
1 clove garlic and a small pinch of garlic powder
2 green onions, roughly chopped
2 leaves kale, stemmed and roughly torn
A small handful of cilantro
1 tsp fresh oregano (or a pinch of dried)
½ tsp sea salt
Process all ingredients in a food processor until the avocado is smooth and there are small dark flecks of kale.
Alternatively, if you don’t want to get your food processor involved, you could mash the avocado by hand and finely chop the garlic, green onions, kale, cilantro and oregano.
